Ever been bored by the cheddar cheese/bacon or lettuce/tomato/onion combinations that appear on every burger menu? Not a problem at BYO Burger, a recent addition to the White Bear Lake dining scene.

The restaurant opened last May, replacing a Zantigo’s Mexican franchise, and has been packed with burger enthusiasts since. It’s a second location for the construction-themed shop, which is adorned with signs cautioning patrons to “Watch Your Step—Burger-Building in Progress,” and offers free construction hats to kids.

BYO stands for “build -your -own,” and that’s just what the burger joint hopes you’ll do. By selecting from the seven buns, seven cheeses and dozens of toppings offered, there’s potential to create more than 486,000 different fresh-made burgers. The menu is rounded out with other sandwiches, soups, salads and sides to accompany your custom creation, all made in house.

For those who’d rather leave the burger-building to the professionals, BYO offers nine pre-designed burgers, ranging from their own take on the Juicy Lucy, a Minnesota classic, to a burger topped with—get this—peanut butter. “It’s very, very popular,” says owner Bob Bohrer of the Cement Mixer burger, which is topped with peanut butter, lettuce, mayonnaise and bacon. “It all comes together; you just have to try it.”
