On December 24, 2015, David Miller gave himself and the community an early Christmas present when he became the owner of Avalon Tearoom. Before purchasing the tearoom, Miller lived in Chicago for five years, working as a pastry baker in a hotel, a museum and a cupcake shop.
Miller has made many changes to this 25-year-old business, starting with the name. In June, the Avalon Tearoom became known as Avalon Bistro and Tea.
Additionally, the interior was updated and its menu has changed with its fourth owner. The bistro has always had a small food menu consisting primarily of scones and quiche, but Miller has expanded the selection to include house-made soups, sandwiches, salads and wraps.
But even with all the changes, the revamped eatery still offers a wide variety of teas and a formal tea service. Miller’s favorite tea is the orange blossom. “It is a black tea that has a lot of orange zest flavor in it,” he says, noting his fondness for earthy teas.
