Taco’s Fresh Sports + Cantina opens in Mahtomedi

There’s another new eatery around town. This fall, the creative minds behind the popular Olive’s Fresh Pizza Bar teamed up with a group of California investors to create Taco’s Fresh Sports + Cantina, which will bring south-of-the-border flavors to Minnesota. Partners Jason Bailey, who founded Olive’s, and Bill Sheffield, who is from Orange County, Calif., promise street-style tacos with natural ingredients, bold flavors and fresh tastes, making Taco’s Fresh a promising addition to the local restaurant scene.

“We pride ourselves on our unique combinations of flavors,” co-owner Sheffield says. With a diverse menu featuring everything from classic taco options like chicken or mahi mahi, to lobster, Taco’s Fresh is sure to please adventurous and more cautious eaters alike.

Sheffield says that whenever possible, Taco’s Fresh will use locally sourced vegetables and non-GMO products, and steer clear of artificial coloring, flavors and sweeteners. In addition to flavor, freshness is a guarantee (it is right in their name, after all).

In addition to the eponymous tacos, the restaurant, which Sheffield describes as “classy, light and fun,” also boasts a full-service bar, so of-age guests can enjoy their beverage of choice, whether it be a glass of wine, a locally brewed beer or a handcrafted cocktail (margaritas are, of course, a specialty).

Tantalizing Tacos

  • Maine: stuffed with sweet lobster, topped with a homemade roasted corn salsa and finished with a lemongrass aioli.
  • Chicken Honeycrisp: a tender and juicy chicken taco, which also includes a slice of Honeycrisp apple and a jalapeño ranch sauce.
  • Cuban: all the elements of a Cuban sandwich—smoked marinated pork and sweet pickles—just in a tortilla! Topped with an orange honey mustard Sriracha sauce.
  • Baja Shrimp: crispy shrimp, fresh red cabbage and their special Baja shrimp sauce cradled perfectly in a warm, flour tortilla.
