Consume that festive fowl this Thanksgiving in more ways than one. Sticking with your go-to game plan for your leftover turkey meal may be easy, but Mahtomedi resident DeeAnn McArdle, the founder of the entertaining and recipe website Unleash Your Inner Foodie, has a better idea—and it’s just as easy.
“We all look forward to turkey leftovers, but want something lighter that incorporates all the savory flavors of Thanksgiving,” says McArdle. “The turkey crostini combines the traditional flavors of Thanksgiving in a fresh and light way. I like to serve it over the weekend with a spinach salad that includes my leftover roasted veggies, dried cranberries and a maple Dijon vinaigrette—yummy!”
Next-day Thanksgiving Turkey Crostini
- Baguette slices, toasted (McArdle likes thinly sliced, toasted multigrain bread)
- Montchèvre fresh goat cheese, rolled in cranberries and cinnamon
- Arugula leaves
- Leftover turkey (white or dark meat)
- Leftover cranberry sauce or chutney
Directions:
- Slice baguette or bread on the diagonal and toast.
- Place a tablespoon of Montchèvre goat cheese on warm toast and spread.
- Place a few arugula leaves on top of the cheese.
- Add slices of leftover turkey.
- Drizzle with leftover cranberry sauce or chutney.
