Apple time is upon us, so head over to one of the area’s best orchards: Dellwood’s very own Pine Tree Apple Orchard. Committed to growing high-quality fruit with environmentally sustainable methods, Pine Tree Orchard delights every fall with 25 varieties of apples, wagon rides, corn mazes, live music, and a wide variety of pies and apple goodies for sale in the shop. You can also pick your own pumpkins from Pine Tree’s six-acre pumpkin patch through October 26.
We were thrilled when the orchard gave us the recipe for their favorite apple dish, which they serve every year at their annual employee party.
Apple-Stuffed Acorn Squash
2 acorn squash
3 tart red apples
1 cup broken cashew nuts
1/2 cup maple syrup
1/4 cup melted butter or margarine
Cut squash in half lengthwise; scoop out seeds and stringy flesh. In a separate bowl, core and dice unpeeled apples; combine with all other ingredients. Fill squash with apple mixture. Brush surfaces of squash with additional melted butter or margarine. Set in baking pan. Pour hot water in pan to depth of 1/2 inch. Cover pan with foil. Bake at 450 degrees for 45 minutes. Serve with ham or fresh pork. Makes 4 servings.
