There’s a celebration going on at Tamarack this month. As the trees run thick with sap, join the naturalists in transforming sap to syrup. The step-by-step process is fascinating: drilling the trees, collecting the sap in buckets, boiling the sap into syrup in the evaporator and enjoying the results on pancakes or over snow, a delicious tradition.
